Barbecue season is coming and many of us are itching to fire-up the grill. If the weather doesn’t allow it, you can grill your steak under the broiler instead.
Many of us (esp. women) are iron-deficient. This iron-rich meal will go along way to ensuring we are rejuvenated, restored and reconnected to good health!
Grill 1 8 oz. steak (rib eye or top sirloin) — trim the fat and chill it.
Prepare salad fixings;
2 heads of romaine lettuce, rinsed and chopped
1/2 sliced red onion
1/2 each of red, yellow and green peppers
1 cup cherry tomatoes, halved
1 cup baby carrots or snap peas chopped
Dressing:
1/2 tsp ginger minced
2-3 cloves minced garlic
2 tbsp soy sauce
2 tbsp leon juice
2 tsp sesame oil
2 tsp white wine vinegar
1 tsp honey
1 tsp oil
Whisk together and set aside.
Combine salad ingredients and grilled steak and pour dressing over top and toss.
Makes 2 servings.
