In recognition of February's theme of "courage", our monthly recipe is a green smoothie.  Some people are turned off by the very idea of drinking something green, but when they try it, they are won over.  Plus, it's a great way to increase the amount of greens in your diet.  

(This recipe is very adaptable to individual tastes and preferences, and to what you have on hand.

Place in a blender and mix together:

1 cup of spinach of spinach/kale mix

1 banana or 1 avocado, or half banana/half avocado (to make it smooth and creamy)

1 cup berries - fresh or frozen blueberries, raspberries, strawberries or mixed berries.  Berries are high in beneficial anti-oxidants. 

1 scoop of whey or vegetable protein powder or 1/2 cup Greek yogurt (for protein, and to add thickness to the smoothie)

2 cups water (or 1 cup water and 1 cup ice)

Teaspoon of flax seed (optional)

Teaspoon of cinnamon (optional)

You can substitute pineapple for berries for a more tropical flavored smoothie.
